Yep, you are correct.  I heard 'grandma' and made the wrong assumption. 
But 
I think can still make my point.  After he produces the first fish he says

something about the "rules here at..." and I thought I heard a brief 
hesitation as, in his mind, he changed what he normally says (the name of 
his regular venue) to say "The Late Show."
