Yes, Pratchett is available in Italian (as well as a stack of other 
languages).

I can't speak for the quality of the Italian translation (as I can't
read Italian!) but I imagine the situation is very similar to that of
the Spanish translation: obviously not all the humour translates
literally, particularly puns, word-play and cultural references, but
the translators generally manage to get something approaching the jokes.
