If you are talking about the last episode made by the original behind
the scenes crew, then it is Hunter's Moon, Part III.  At the end
there, yes, the humans do know of the Gargoyles as they are seen on
tape flying about.  None of the Gargoyles die.

If you are talking about the very last episode of "Gargoyles: The
Goliath Chronicles" then the last episode is called Angels in the
Night.  They spent this entire season known to the humans but
feared/hated, etc.  During this last episode the humans start to
accept the gargoyles as good guys. None of the Gargoyles die.
