Canning is not at all difficult, and I find it a lot of fun. Pickles,
salsas (with the right recipe) and most fruits (including tomatoes, but
not
peppers or squash) can be Boiling Water Bath processed, which means you
probably already have all the equipment you need, although a canning
funnel
and a jar lifter will make the process a lot easier.
Vegetables and non-acid fruits will require a pressure canner.
Get yourself a copy of the Ball Blue Book. Some Walmarts have it, as do
some Ace Hardware stores, and of course you can get it online. For a few
bucks you'll get all the information on canning you really need and a
bunch
of very good recipes. (Don't use the section on canning from one of your
cool vintage cookbooks -- guidelines for safe canning have changed a lot
over the years.)
